Thomas Doherty Butchers Crowned Supreme Champion at National Sausage & Pudding Competition - Awarded by Craft Butchers at Food & Hospitality Ireland -

Thomas Doherty Butchers has been crowned Supreme Champion at this year’s Associated Craft Butchers of Ireland (ACBI) National Sausage and Pudding Competition held at retail and hospitality expo, Food & Hospitality Ireland, which took place at the Citywest Hotel Wednesday September 16th.

John Hickey CEO, ACBI presented Thomas Doherty, owner and manager of Doherty Butchers with winner of the Speciality category and overall Supreme Champion for his Pork and Leek sausage.

The prestigious competition has been running for well over 11 years now says ACBI, who were delighted to say that this year was an extremely successful year for entries, with over 40 finalists in the competition. The competition was judged by the highly knowledgeable Leslie Williams, food writer for the Evening Herald and Irish Examiner and member of the Irish Guild of Food Writers and the very experienced Marilyn Bright also a member of the Irish Guild of Food Writers.

Overall the judges were impressed with the quality and innovation of the products in Citywest. Leslie Williams was very impressed by the unique tastes, flavours and most of all with the quality of the sausages describing the winning Speciality Pork and Leek Sausage as “a beautiful meaty sausage, expertly made with a nice leek flavour and perfect seasoning.”

He went on to say “not many people realise the work and creativity that goes into traditional sausage making, you have recipes that are handed down through generations and the secrets will never be revealed, but the key to a good sausage is using the very best of ingredients and Craft Butchers know all about sourcing the best local ingredients available”.

Thomas Doherty also won gold for his traditional sausage and silver for his black pudding.

Thomas was delighted with the win saying “I am thrilled with the award, we’ve been making sausages for over 8 years now, they are freshly made in store each day and a lot of time and skill goes in to preparing them, it’s fantastic  to be recognised in such a prestigious competition”.

Thomas Doherty and his family own a small farm in Kells, County Meath. In 2007 he decided to set up a butcher shop in Canon Street, opposite the 10th century Round Tower and Monastic Site in the heart of Kells. Using locally sourced meats, and preparing everything on site, he stuck to high standards and quality and in consequence has become one of the most popular butchers in the local area. His meats are used in the local hotels and restaurants, and his black pepper sausages are a favourite specialty to all.
