The ACBI Apprenticeship Project
2006- 2010
For many years butchers in common with a great many other trades passed on the skills and traditions of their craft through learning on the job. While this was highly effective and sustained many generations of crafts people it does not meet the standards of today's workforce for certification.
On the other hand attendance at college based course placed many burdens on small businesses and the young people undertaking the training.
It is each of these issues that this project aims to address. We will be hoping to develop training on the job that will be carried out to agreed and verified standards and which will result in the young person acquiring a recognised qualification. Indeed the project aims to produce for the first time a qualification that would be recognised throughout the island of Ireland.

Firstly there are no educational or other qualifications to get involved.
You may already be working in a butcher shop or just thinking about it. But anyone can become involved.
The only requirement is that you find a business which is in membership of ACBI and secure employment as an apprentice. Details of this will be a matter between you and your employer.
Then the business will be assessed and approved for participation in the scheme, training materials will be sent which will be mentored by your employer or another supervisor in the shop and which will be the subject to regular evaluation by our team of independent assessors.
We must stress that this is a pilot project and as we go along much work will be undertaken on acquiring certification and approval for the materials. But all of the participants employers apprentices and others will be part of an exciting experiment which will underpin the future of one of our most important craft food traditions that of the traditional butcher.
Requirements:
Secure an Apprenticeship in and ACBI member.
No age limit - no prior ed. qualifications required: (However most of present candidates have Leaving Cert.)
Time-frame envisaged: 2 ½ - 3 yrs, but this can be shorter.
Enhancements
All training takes place on the job (with occasional modules off site)
Assessment also takes place on-site
Level 5 on National Framework of Qualifications ( Equivalent to Level 2 NCVA Cert.)
Accreditation by FETAC means recognition Nationally & Internationally
Higher Education Links Scheme enables holders of FETAC Level 5 Awards to apply for a Higher Education place in a range of Higher Ed. Institutions. In addition the Institutes of Technology and some other higher education institutions offer progression routes from Fetac Level 5 Awards to a variety of Higher Education Courses
THIS IS A FETAC ACCREDITED QUALIFICATION. IT WILL BE RECOGNISED BOTH NATIONALLY AND INTERNATIONALLY.
